The Cayenne pepper variety is a very old red pepper vine first documented in 1943. It was brought to Europe by Christopher Columbus.
It is a strong plant that offers an abundant harvest with little effort. It produces scarlet red peppers, slightly wrinkled and up to 12 cm long distributed along all the branches.

The sowing season is between February and May in the northern hemisphere. It needs a minimum temperature of about 20ºC for the seeds to germinate.
Place 2-3 seeds in a small pot or a seedbed buried 1cm deep. A good quality substrate should be used, keeping the soil moist.
It produces plants up to 60-70cm high, with a lush appearance and a multitude of fine but flexible branches with rounded green leaves.

This plant needs a lot of light, enough temperature and abundant water but without water-logging its roots, maintaining the growing soil always moist. By providing these conditions the plant will produce larger peppers with a better quality and aroma.
They are ready for harvesting after about 71 days. They should be cut with scissors without pulling them so as not to damage the plant. The longer to collect the peppers, the hotter they will be because of the higher capsaicin concentration. The harvest encourages a greater production by stimulating new pepper production.
The peppers can be stored by drying and grinding them to obtain the cayenne pepper. We can also freeze them or make pickles. Peppers are very healthy, rich in vitamins, fibre, potassium, silicon and antioxidants. They act as a stimulant, digestive and disinfectant and have a beneficial effect on the cardiovascular system.
