Pastinaca sativa
Parsnip is a vegetable very similar to the carrot, with very similar cultivation requirements. It is a biennial plant, with yellow or orange roots, but always paler than the common carrot.
It is a very slow germinating plant, requiring 4-5 weeks. It prefers loose soil and no fresh fertiliser, otherwise the roots may fork.
It is a plant with great resistance to cold and requires little heat in summer to mature. In colder climates,germination is usually done in earlyspring in order to harvest in autumn. InMediterranean climates, sowing is usually done inlate summer for the harvest the following spring.
