Centaury flowers have a sweet to spicy taste with a certain resemblance to cloves. It is most often used in culinary garnish, in salads, omelettes or pasta dishes.

Centaurea does not present difficulties in cultivation, it only needs long sun exposure and occasional watering. It is also resistant to occasional frosts as long as they are not too strong or long-lasting. This plant flowers between spring and autumn.
