Wild Sorrel (Rumex acetosa) is an herbaceous plant native to Europe belonging to the Polygonaceae family. It produces smooth, lance-like leaves distinguished by a very particular vinegary flavour and being rich in potassium, fibre and vitamins A and C.
The seeds must be germinated in late winter - early spring in a seedbed with peat and worm humus. About 3-5 seeds are buried at a maximum depth of 1cm, and provided with a moist substrate, sunlight and a good temperature (15-20°C), the sprouts emerge in the seedbed after about 10-15 days.
After the frost season, it can be transplanted into open ground in our vegetable garden or into a large pot. It is possible to add some humus to the bottom of the planting hole. By providing a loose substrate rich in organic matter, good growth and leaf production is enhanced.
Wild Sorrel, perfect for salads or cooking
Wild Sorrel likes humidity. It is adapted to clayey substrates and to grow near rivers and in humid and shady areas. It is always interesting to maintain these conditions in our cultivation for a healthy and fast development. If there is a lack of water, the leaves deteriorate very quickly and lose their aroma, therefore it is recommended to use an automatic irrigation system.
This perennial plant withstands low temperatures and even not very long frosts fairly well. So, by keeping it sheltered in winter in a greenhouse or indoors, it can live from one year to the next with not too much difficulty.
In about 2-3 months from sowing, Wild Sorrel is ready to harvest. A staggered and controlled harvest so as not to exhaust the plant. With a gradual harvest it is possible to enjoy its flavour and delicious texture for a long time, both in salads and in stews, using it in a similar way to how we cook spinach.
