Rocalba chervil, aromatic plant belonging to the parsley family
Chervil (Anthriscus cerefolium) or "French parsley" is an herbaceous plant belonging to the Apiaceae family. It is native to the Caucasus, although the Romans distributed it throughout Europe, becoming naturalised in many countries.
It is a plant with an annual cycle that reaches about 40-70 cm high. It develops hollow thin and long stems with lanceolate lobe cut leaves similar to those of parsley. In spring it produces small white flowers shaped like an umbel.
The germination is done in spring in order to harvest it in summer, or germinated in autumn for harvesting in winter. It can be sown in a seedbed or directly in open ground, with 3-5 seeds in a 30cm x 30cm planting frame. It requires a quality, well-drained substrate rich in worm humus or compost.
Rocalba Chervil, easy to cultivate, bitter and aniseed-flavoured
It requires a warm climate not excessively dry, with temperatures between 20-30ºC. It is best to place it in a sunny and shady area, so as to prevent it from gleaning or drying out due to excessive heat. It is a plant that bears low temperatures quite well.
It needs frequent almost constant but moderate watering to avoid waterlogging the substrate, especially in very hot regions. Controlling the irrigation in very hot areas prevents the plant from gleaning excessively. The use of a drip or automatic irrigation system helps to maintain the chervil in the best conditions without too much effort.
The leaves are harvested all year round when the plant is about 10cm tall or 8-10 weeks after sowing. It should be consumed fresh to enjoy its aniseed and parsley aroma, adding it to the dish at the end of the preparation without cooking it.
