Organic Giant of Italy parsley, a very easy to cultivate variety
Giant of Italy parsley (Petroselinum crispum) belongs to the carrot family, the Apiaceae. It is a plant notable for its smooth, bright and intense green leaves, which are large and shiny, very aromatic and tasty. It acquires an upright bearing and it sprouts easily when it is harvested.
Although it can germinate all year round, the ideal time is spring when temperatures start to rise. About 5 seeds are placed in a seedbed with peat, pearlite and worm humus. It should be placed in the sunlight, keeping the substrate humid and preventing it from becoming waterlogged. After 20-30 days the seeds begin to sprout.
In about 3-4 weeks when the plant has developed 4 proper leaves it can be transplanted into the open ground or into a final pot, placing it in a sunny or shady area with at least 3 hours of direct light per day. A substratum rich in organic matter and with good drainage should be provided, although it adapts quite well to all soils and climates.

In the vegetable garden, we should leave 20cm between plants to obtain the best results. When planted next to a rose bush it prevents aphids, together with carrots it repels the carrot fly and improves its development, and with tomatoes plants parsley also enhances tomatoes growth.
Provided with frequent but controlled watering, the plant grows and develops leaves continuously throughout the year. The plant can even live for two years in areas with temperate climates. The use of a drip or automatic irrigation system can facilitate the work a lot.
It can begin harvesting after 3-4 months from sowing, when it has reached a considerable size and has a high re-growth capacity, cutting the leaves and tender stems to use them in our dishes, both fresh and cooked.
