Rocalba Savory seeds, simple to cultivate and very aromatic
Summer Savory (Satureja hortensis) is an aromatic and medicinal plant belonging to the Lamiaceae family. It is a plant highly appreciated for its digestive, antiseptic, expectorant and even aphrodisiac properties. It is used in cooking, for stews and for pickles such as in olives.
It is a simple plant to germinate and cultivate, as it requires few resources (little organic matter or worm humus) and also low watering.The seeds are sown directly in open ground or in the final pot. 3-4 seeds are placed at a 0.5mm depth. In about 10 days the first sprouts emerge. A planting frame of 30cm between plants and 50cm between rows is recommended.
Savory grows up to about 50cm high, developing strong woody stems with narrow 1-2cm long leaves crowned by very small white flowers.This plant is adapted to dry and calcareous soils, with a lot of sun and mild temperatures and sheltered from the wind.
Summer Savory, ideal for stews and pickles
This plant is not too demanding in terms of both nutrients and watering (even so, having an automatic irrigation system always makes the task easier). It develops slowly but surely throughout the hot season and until late autumn, ceasing to grow with the arrival of low temperatures.
It can be harvested as the leaves are needed, since they are not used too much at once due to their high aromatic power. If one intends to dry the stems, it should be cut just before flowering, thus the plant concentrates its properties to the maximum (before summer).
It can also be used to prepare liquors, so in this case it is best to wait until it has flowered abundantly and then harvest the branches, so that the drink is impregnated with more aromas and oils to round off its flavour.
