It is used as an accompaniment, garnish or simply as an appetiser seasoned with coarse salt. Padrón peppers can be cultivated in vegetable patches, gardens and in pots.

Organic Padrón Peppers, small sized peppers originally from Galicia

Padrón peppers are a variety (Capsicum annuum) that grows up to 80cm in size. It produces small (5-10cm) blunt-pointed triangular fruits of green colour with an intense flavour and high culinary power. Some of them can be really spicy. Padrón peppers come from Galicia (Padrón town), it is said that the Franciscan monks brought them to Spain when they returned from America in the 16th century.

Organic Padrón Peppers, a plant that appreciates a substrate rich in organic matter

It is advisable to start the seedbed from January to May (early spring), and to transplant them to the definitive location when the plants develop 3-4 leaves. The succulent fruits are ready to harvest in about 150 days. It is important to keep the substrate slightly humid as they do not like drought but neither waterlogging, benefiting from soils rich in organic matter. Padrón peppers are a good variety to grow in pots, enjoying them on the terrace or balcony. It is advisable to use stakes to support the plant when it reaches about 40cm, not to leave the peppers on the plant for too long and harvest them tender so that they do not get a spicy flavour.

Padrón peppers can be grilled, fried fresh in a frying pan with a good olive oil and then seasoned with coarse salt. It can be enjoyed as an appetiser, accompaniment or garnish for other foods such as meat or fish.
