Caper seeds, a simple to cultivate productive plant
Caper (Capparis spinosa) is a perennial plant belonging to the Capparidaceae family originating from southern Europe. It is a plant that grows very ramified and dense with petiolated leaves, reaching up to 1.5m in height thanks to its thorny hooks (Stipules).
It is a very pleasant and simple plant to cultivate. The seeds germinate in spring after the frosts. They can be germinated in a seedbed or in direct sowing using a planting frame of 2.5m x 2.5m or larger, benefited by a substrate very rich in worm humus, compost or manure.
It is advisable to soak the seeds for 24 hours to activate them, and then sow them in a pot in groups of 2-3. Then cover the seeds with about 0.3mm of uncompact soil and water them abundantly. They should be placed in a sunny place with a temperature of over 15ºC. The first shoots emerge in about 2-3 weeks.

Although it adapts to all substrates, it offers the best results in loose, well-drained, plenty of sunlight soils nourished with nutrients and organic matter. This ensures a rapid development and abundant flowering, with a good production of caper flowers and caper fruits.
From spring onwards it starts to produce really beautiful white flowers of up to 10cm. The capers can be harvested throughout the summer and early autumn. The flowers then give rise to fruits that can be harvested late in the season before the cold weather arrives.
This plant requires moderate but frequent watering in order to provide a good harvest. It is advisable to use an automatic irrigation system to facilitate the task.
Both caper flowers and caper fruits can be used as a condiment or appetiser, preparing sauces, mayonnaises, in salads, etc. Certainly it is a pleasure to enjoy their intense, aromatic and slightly bitter flavour.
