In cooking, umami is the fifth flavor, the one that comes after sweet, salty, sour, and bitter: the one that coats the palate and can never be fully named. In Japanese, the word literally means "essence of deliciousness". Hard to find a more explicit name for a seed bank whose motto fits in three words: Flavor > Everything.
Umami Seed Company has just entered Alchimia's catalog with eight varieties. A good excuse to introduce a Californian breeder whose work has been circulating among extractors and terpene hunters for years.

A breeder obsessed with terpene profiles
Umami's founder has been growing cannabis in small batches since 2006, almost twenty years of selection before the brand formally existed. Umami Seed Company was born in February 2016, in Laguna Beach (California), with a guiding idea embraced without hesitation: life is too short to smoke something that's just "okay".
This approach has very concrete consequences on the selection method. Where many seed banks juggle between production, vigor, resistance, and aroma, Umami always tips the scale in favor of terpenes. The rest—structure, density, resin production—must accompany, but never dictates the final decision. The result is a catalog with frankly unusual profiles: from dark chocolate to grape soda, passing through lime zest and strawberry caramel.

Parallel to the breeding work, the company also offers consulting to industry companies, from genetics to market release.
Lab-tested seeds and reviewed by 200 growers
Two points deserve to be highlighted, because they are uncommon and because they matter.
HLVD screening. Each batch is laboratory tested to detect hop latent viroid, that pathogen which has wreaked havoc on professional North American crops and which is transmitted mainly through plant material. A control that is far from anecdotal when introducing new genetics into an already established growing space.

After months of tending premium clones, flowering collapses: stunted plants, small airy buds, and yield losses up to 50%. This is how HpLVd strikes—the “COVID of cannabis,” a stealthy viroid spread through clones and contaminated tools. It impacts trichomes, potency, and terpenes, often staying hidden until bloom. Knowing its history, symptoms, and transmission is key to keeping crops healthy and preventing disaster.
The tester network. Before commercialization, each line passes through the hands of an international network of more than 200 experienced growers—the "Terp Testers", coordinated through the brand's Discord—. This is what allows unstable phenotypes to be discarded and the real behavior of plants to be documented indoors and outdoors, beyond the breeder's own data.

Umami's creations have accumulated more than fifty distinctions in cannabis cups and international competitions.

Collaborations with Shuga Seeds: 1st place rosin and hash at the Copa del Plata 2022, 1st place hash at Dabadoo Uruguay 2023, and 1st place hash and flower at the Copa del Edén 2023.
This track record says something important about these genetics: they are mainly recognized in extraction categories. Abundant glandular production, trichome heads that separate well, profiles that withstand the process: this is the house's natural terrain.
The Umami lines worth knowing
Three pieces are repeated over and over again in the Umami catalogue:
- ZODA — Zkittlez x Acai Gelato x Seattle Soda. The flagship line, the one that brings the soda-type terpenes, the color, and the resin load.
- Limecai — Acai Gelato x Key Limeade. The citrus side: freshness, lime zest, and shades ranging from olive green to almost black purple at the end of flowering.
- SBZ — Strawberry Banana x Zkittlez. The candy and red fruit base that reappears in a good part of the crosses.
